Brussels Sprouts & Bacon Pasta
Ingredients:
- 250g pasta
- 250g bacon lardons
- 150g brussel sprouts, washed and slices
- 1 onion, finely shopped
- 1 garlic cloves, minced
- handful of fresh parsley
- 1 tsp dairy free butter
- salt & pepper
- Parmesan cheese (optional)
Method:
- Boil a pan of water, whilst boiling, in a frying pan fry fry off the bacon and chopped onions
- Once the onions are transparent, add the dairy free butter, sliced sprouts and fry until they begin to golden along with the garlic
- In the pan of boiling water, add the pasta and follow the packet guidelines.
- Once the pasta is cooked, add it to the bacon, onions, sprouts and garlic in the frying pan. Add in the fresh parsley, salt and pepper and give it a good stir.
- Once all the ingredients are well incorporated, plate it up and sprinkle with parmesan cheese.
